Tung Ting (Dong Ding)
Oolong from the famed Dong Ding Mountain (aka Frozen Summit) in Taiwan's Nantou County remains one of the country's most cherished tea offerings. The lightly oxidized, perfectly rolled leaves, grown at heights of just over 2,000 feet, present a light yellow liquor with sweet, honey notes & hints of pineapple. Steeping Instructions
- Fill kettle with fresh water.
- Heat water until below boiling (approximately 195-205°).
- 2-3 teaspoons (3-5 grams) of tea per 6-8 oz. cup or pot.
- Rinse leaves by pouring the heated water over the dry leaves, discard liquid immediately.
- Pour heated water over leaves, steep for 30 seconds - 1 minute.
- Subsequent steeps longer, up to 4 minutes.
*Oolong leaves are traditionally steeped several times per sitting.
