Dating back to the Ming Dynasty, Gaiwans are 3 piece Chinese teaware made up of a bowl, a lid and a saucer (gài/盖 meaning lid, and wǎn/碗 meaning bowl). Place tea leaves directly in the cup, pour heated water over the tea, cover while steeping, then lift the Gai Wan to sip leisurely using the lid as a filter by tilting slightly downward. Refresh the Gai Wan for as many cups as desired.
