Creamsicles with a Tea Twist

A simple sunny day recipe ~ Enjoy!

Ingredients:

Please use local, organic, and seasonal products when feasible.

Method

  1. Make tea infused dairy by adding 4 tablespoons SerendipiTea, 2 cups milk, 1 cup light cream, and 4 tablespoons sugar to a small sauce pot over medium heat.
  2. Bring mixture to a boil; stir every few seconds to prevent sticking and burning.
  3. When mixture is boiling, reduce heat and simmer mixture for 3 ½ minutes.
  4. Remove from heat, strain into a stainless steel bowl, and allow mixture to cool for 10 minutes.
  5. When properly cooled, slowly whisk in yogurt until properly emulsified.
  6. Carefully pour mixture into 6, 4oz. Popsicle molds. For best results allow to freeze overnight. Mix can also be poured into ice cube trays (insert wooden Dixie Spoons after a few hours in the freezer while still soft). Freeze overnight then serve in small bowls or in cups with corresponding fruit (mango, strawberry, etc.) a sprig of mint.
