A simple sunny day recipe ~ Enjoy!
SerendipiTea “Creamsicles”

Yields: 6 Pops
Ingredients:
- Milk, 1%: 2 cups
- Light Cream: 1 cup
- Cane Sugar or Honey: 4 tablespoons
- Low-fat Yogurt: 12 oz.
- SerendipiTea’s Razzle Dazzle’em: 4 tablespoons
- and/or
- SerendipiTea’s Congo Bongo: 4 tablespoons
Please use local, organic, and seasonal products when feasible.
Method
- Make tea infused dairy by adding 4 tablespoons SerendipiTea, 2 cups milk, 1 cup light cream, and 4 tablespoons sugar to a small sauce pot over medium heat.
- Bring mixture to a boil; stir every few seconds to prevent sticking and burning.
- When mixture is boiling, reduce heat and simmer mixture for 3 ½ minutes.
- Remove from heat, strain into a stainless steel bowl, and allow mixture to cool for 10 minutes.
- When properly cooled, slowly whisk in yogurt until properly emulsified.
- Carefully pour mixture into 6, 4oz. Popsicle molds. For best results allow to freeze overnight. Mix can also be poured into ice cube trays (insert wooden Dixie Spoons after a few hours in the freezer while still soft). Freeze overnight then serve in small bowls or in cups with corresponding fruit (mango, strawberry, etc.) a sprig of mint.
