Ingredients:
*Please prepare using local, organic, and seasonal products when feasible.
- 2 cups strained tomatoes
- ¼ cup packed light brown sugar
- ¼ cup onion, minced
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons water (for puree) / ½ cup water (for tea concentrate)
- 2 tablespoons apple cider vinegar
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 2 tablespoons hot sauce
- 1 teaspoon chili powder
- 1 tablespoon salted butter
- 1 tablespoon Worcestershire sauce
- 4 tablespoons SerendipiTea's Faux Cocoa* (concentrate)
- 4 tablespoons SerendipiTea's Lapsang Souchong* (1 oz.)
- Sea salt, ground, to taste
- White pepper, ground, to taste
Method:
- Blend onion, garlic & 2 tablespoons water into a puree.
- Make tea concentrate. Boil ½ cup of water, add 4 tablespoons of SerendipiTea's Faux Cocoa. Steep for 4 ½ minutes & strain.
- In a medium saucepan, heat olive oil over medium heat. When the olive oil is warm, add the onion & garlic puree. Simmer until golden brown.
- Add remaining ingredients & SerendipiTea's Lapsang Souchong (in a sachet or cheese cloth) & mix thoroughly.
- Simmer sauce for 20 minutes. Stir to prevent sticking & burning.
- Add salt & pepper to taste. Remove from heat & cool to room temperature.
