Iron Goddess of Mercy celebrates the Chinese Goddess of
Mercy, Guanyin (or Ti Kuan Yin) who, according to legend, appeared to a poor
farmer in a dream. She told him about a cave behind a rundown temple where
treasure awaited. In the cave the farmer found a single tea shoot which he
planted in his field. He nurtured it into a large bush from which the finest
tea was produced. Our beautiful curled Ti Kuan Yin leaf from
Fujian Province produces lovely, fragrant, amber liquor. Tender, peachy notes
intermingle with nutty overtones. Medium oxidation.

Steeping Instructions:
1. Fill kettle with fresh water. 2. Heat water until below boiling (approximately 195-205°). 3. 2-3 teaspoons (3-5 grams) of tea per 6-8 oz. cup or pot. 4. Rinse leaves by pouring the heated water over the dry leaves, discard liquid immediately. 5. Pour heated water over leaves, Steep for 30 seconds - 1 minute. 6. Subsequent steeps longer, up to 4 minutes.
